A little bit of Greek – Spanakopita!
I love making these little triangular treats! They are so expensive in the shops but really easy and cheap to make, especially if you buy your feta from buyersbasket.club! They are great for an easy weekend lunch, (paired with a little salad) and my boys love them in their lunch boxes. A great way to get children to eat spinach!
There are loads of recipes on the net, but here’s the one I use: spanakopita recipe. I reduce the amount of onion as the children are a little onion averse!
And a little bit of Italian – Baked white fish with olives
Fish is among the healthiest foods on the planet! It is loaded with important nutrients, such as protein and vitamin D. It is also the world’s best source of omega-3 fatty acids, which are incredibly important for your body and brain.
I’m always looking for tasty, easy ways to get our family to eat more fish. Here are a few of my favourites!
